Is it possible to use an iPhone/iTouch app called TouchOSC with Kyma?

Yes, I know of someone who is using an iPod touch and OSCulator (http://www.osculator.net) to control Kyma.

I am using TouchOSC on an iPod Touch - it is great and works very well with OSCulator - highly recommended
