Periodically I dumb out and forget that many groovy things are limited to Windows <sigh>, which is what happened when getting the lovely Falcon now sitting on my desk.

Does anybody out there in Capyland happen to know offhand of a way to get data from a controller with Windows drivers into Kyma on a Mac?

while i don't think it will help you get the control data into kyma, this app here should make it possible to use the device with a mac in general:

you could maybe transform the controller data into a virtual wacom tablet, then use that with kyma.....

Looks like someone has developed an OS X/Unix driver for the falcon. Try googling 'libnifalcon'. I have no idea if it is any good, or whether you are into hacking drivers. But if yes to both, then you might be able to do something like put together a Max interface to the falcon driver, then use the max connection thingy to talk to Kyma over the flame.
