Does anyone know which MIME type I should put into Netscape Applications Perferences so that when I click a download and save the download as source, I end up with a Kyma file and not a SimpleText Read Only file like I get at the moment.

Currently I'm 'ResEdit'ing them to change them into KYM0 file types.

Andrew,
If ResEditing the files works, then you could accomplish the same results using File Import in Kyma on those files before you try opening them in Kyma. (Reminder to all Mac users that you have to Import any files that have the extensions on the end, such as soundfile.kym)
